Carrot Cupcakes with Cream Cheese Frosting

A friend gave me a jar of cream cheese frosting so I thought of doing the cupcake version of my carrot cake. No point letting the frosting go to waste :)

The cake recipe makes 24 standard-size cupcakes.

Chocolate Cream Cake

I got a call from my 6-year old nephew requesting me to bake a birthday cake for his sister who's turning 8 this June. He told his mom (my sister) that she doesn't need to go get a cake from a bakeshop because I can bake one! Kids these days... :)

My niece requested for a Chocolate Cake. This cake's frosting was adapted from a recipe of Bobby Flay's.

Mango Swirl Cheesecake

It's Mother's Day and what better (and sweeter) way for me to say '"I love you, Mom" than to make her a cake!

We have an abundance of mangoes this season so I thought of making a fresh Mango Cheesecake. It's a refreshing, light treat for hot summer days.

The crust is a mixture of flour, butter, graham crumbs and coconut.





The cream cheese filling is made with fresh mangoes and mango puree. The taste will hugely depend on the kind of mangoes you put in it. This came out sweet and tangy, which I think is a good combination. It's not too sweet that you wouldn't want to take another slice!






On top, I drizzled mango puree and swirled it around with a knife to get that marbled effect. I also added some fresh mango slices. I would have put whipped cream if I had some on hand for that final touch.







This took me an hour to prep, an hour and a half to bake, another hour to cool to room temp, and 18 hours to chill! Only for you, Mom!

Vanilla Cupcakes with Chocolate Buttercream Frosting

Friday night and cancelled plans because of the Tsunami alarm caused by the Japan earthquake. With nothing else to do other than tuning in on CNN, I decided to bake cupcakes. The ingredients were pretty simple and everything was handy at the moment.


I made 2 dozen cupcakes and I gave them way to friends at a baby shower. Perfect timing :)

Carrot Cake



I had left-over cream cheese frosting so what do I do with it? Bake a Carrot Cake! I was quite pleased with how it turned out -- very moist, flavorful and not too sweet. The raisins and the diced pineapples give natural sweetness to this cake; the walnuts give it crunch. Topped it with sugar carrots.

Red Velvet Cupcakes

I recently missed the chance of sampling The Cheesecake Factory's Red Velvet Cheesecake. So tonight, just to satisfy my craving for anything red velvet, I made red velvet cupcakes. It also gave me an excuse to use the cupcake stand that I recently bought :)

The cream cheese frosting goes so well with the moist cake. Enjoy!

Birthday Cupcakes

So I was asked to make cupcakes for a surprise birthday party. I made two flavors for variety, simple vanilla and chocolate, and frosted each with buttercream icing.

No specifics were given so I went wild with the colors and experimented too on the designs with piping tips. It was fun but oh-so-tedious! I like how they turned out. For a personalized touch, I made a cupcake topper with the celebrant's photo I lifted from Facebook.
